Head Beekeeper / Honey Mixologist

"As a kid who grew up in the projects in Milwaukee in my younger years surrounded by bricks and concrete my exposure to nature came from my parents taking us to weekend barbecues to the park and my grandfather taking me up North to go fishing. At that time there was no indication that years later I would develop a desire to become a beekeeper. 2012 was the beginning of my Beekeeper career and it has grown from there. Aside from keeping my own hives I provide mentoring services, presentations and have helped others get started in their beekeeping journey as well as wasp extermination".

What is a Honey Mixologist?

A Honey Mixologist is a specialized culinary artisan who elevates pure, 100% raw honey into a dynamic sensory experience. By expertly infusing raw honey with all-natural ingredients—such as dehydrated fruits, botanicals, spices, and herbs—they transform traditional honey into complex, textured, and multi-layered flavor profiles.

Unlike standard honey producers, a Honey Mixologist approaches honey with the philosophy of a craft bartender or pastry chef. They carefully balance sweetness with acidity, earthiness, or brightness, turning a simple pantry staple into a sophisticated gourmet ingredient designed for culinary pairings, artisan beverages, and fine dining.

Core Characteristics of the Craft

100% Raw Foundation: Always begins with Raw honey to preserve its natural authentic regional characteristics.
Natural Infusions: Utilizes premium, all-natural additions—such as crisp dehydrated berries, citrus zests, crushed botanicals, or warming spices—without artificial flavorings or additives.
Flavor Architecture: Intentionally designs flavor combinations that highlight, contrast, or elevate the inherent floral notes of the base honey.
Culinary Versatility: Creates specialized honey blends tailored for cocktail rimming, cheese pairings, artisanal glazes, and gourmet tea or coffee enhancement.

“A Honey Mixologist doesn't just sweeten food; they curate the natural essence of the hive, reimagining raw honey as a canvas for bold, botanical, and fruity innovation.”
